A cook in Catania invented "u ripiddu nivicatu", translated "a snowy mountain": Black rice with cuttlefish, presented in a pyramid-like shape, with the tip topped with cottage cheese, topped off with a teaspoon of spicy tomato sauce to represent the Etna (Renowned volcano in Sicily) - dark, black, snow, and fire at its center.
